We specialize in
preparing creative, seasonal menus for easy & elegant entertaining. In
the summer we prepare beautifully arranged platters for casual takeout parties and get
togethers. In the off season we can plan for more elaborate events as we consult
with you about all the necessary details. |

Cold Hors D'Ouevres
Sliced Beef Tenderloin - on croustini served with
horseradish dijon sauce or roasted red pepper puree.
Sate Skewers of Chicken, Beef or Pork - served with
peanut sauce and marinated cucumbers.
Crostini topped with your
choice of roasted vegetables, grilled chicken & roasted
peppers, or fresh tomatoes and basil.
Shrimp, Shrimp, Shrimp
Traditional shrimp cocktail and sauce. Herb roasted shrimp
with zesty remoulade. Marinated and peppered, peel and eat
shrimp with roasted pepper aioli.

Whole Beef Tenderloin
Roasted and grilled with fresh herbs and stuffed

Baked with a cider sauce.
Pork Loin
Roasted or grilled with your choice of maple mustard glaze, spicy southwest
marinade or bistro style with roasted shallots and coarse mustard.
Atlantic Salmon
Whole sides marinated with lemon and herbs. Served roasted, grilled or poached
with your choice of cucumber dill sauce, roasted red pepper aioli, roasted red

Slow roasted with herbs and served with apple stuffing and pan gravy.

Imported pasta with fresh ricotta and alfredo cheeses layered in a variety of

Layered alternately with marinara and white wine cream sauces. Extra sauce

Freshly ground beef, prepared Italian style with herbs and vegetables, topped
with our own marinara.
Zita and Sauce
Precooked ziti with three quarts of our own marinara and a pint of alfredo
cheese.
Sausage Cacciatore
Sweet or spicy Italian sausage sauteed with fresh peppers, onions, garlic, and
wine with a marinara sauce.
Baked Pasta
Small shell pasta and fresh vegetables baked with three cheeses and an herb
cream sauce, topped with sourdough bread crumbs.
Roasted Vegetable Ragout
A slow roasted vegetable stew served with your choice of Couscous, brown or
basmati rice. One pint of alfredo cheese included.
Chicken Cacciatore
Boneless chicken sauteed with fresh peppers, onion, garlic and wine with a
marinara sauce.
Grilled Marinated Chicken Breast
Lemon herb marinated boneless chicken grilled and served with spicy roasted
onions and garlic.

Crudite of Seasonal Vegetables - with your
choice of two of our dipping sauces; Curry dip, blue cheese, honey mustard or
pesto cream.
Mediterranean Hummus Platter - our own
hummus served with freshly baked and seasoned chips, cucumbers and calmata
olives.
Antipasto Platter - a brimming platter of
grilled and roasted vegetables, marinated artichoke hearts, seasoned white
beans, cheese tortellini, fresh mozzarella and calmata olives. Served with
crostini and a roasted garlic sauce.
Pate and Cheese - we include two pates
fresh sliced from our deli, a variety of cheeses, along with sliced red onion,
cornnuichons, capers, and course grained mustard. Served with baguette
slices and imported crackers.
Fruit and Cheese - a selection of fresh
seasonal fruit with a variety of hard and soft cheeses. Served with
baguette slices and imported crackers.
Wrap It Up Baby - wrap sandwiches with a
variety of meat and/or vegetable fillings, artfully arranged.
VFM Deli Platter - for a buffet or picnic,
your choice of three meats and two cheeses, served with all the necessities
including freshly baked bread and rolls.
Buttermilk Biscuit Platter - a mini
version of our buttermilk biscuits stuffed with a variety of meats, spreads and
salads, including roast beef, ham, turkey, tuna and chicken salad. Lobster
salad may be added at market price.
Smoked Fish Platter -
locally smoked fish including salmon, mackerel and trout, with
brie or herbed cream cheese, crostini, black bread, mustard dill
sauce and horseradish cream.
